Biff's Roasted Vegetables
These are great for a brunch but can work just as well as a side dish for an evening meal.

4-5 potatoes
1 onion
1 red pepper
handful of mini carrots
handful of brussel sprouts
olive oil
salt
pepper
fresh rosemary
fresh thyme

Cube potatoes, onion, pepper, and carrots. Halve brussel sprouts. Place vegetables in small bowl. Add some olive oil (2 or 3 tablespoons), salt, pepper, chopped fresh rosemary, and thyme. Toss to combine. Spread on two cookie sheets. Roast in a 400 degree oven for 15-20 minutes. Turn vegetables occasionally for even cooking.
